Yup, I guess it’s time for another Review. Last time my friend and fellow blogger Dan Tanner reviewed Roger’s bar, this time is on the Silk Hotel. Are you ready to treat yourself and a loved one to a very special “splurge” on a fine dinner with gorgeous atmosphere? Then you can hardly do better than to go to Silks, formerly Habitation Chaubert and currently under new management.

By all means, if possible, make a post-sunset dinner reservation, but arrive during the daylight hours to stroll in the gardens, relax and take some photographs, etc. before dinner. You’ll be glad you did, because the gardens, managed by Mingo, are truly remarkable.

Dan and his wife Ruth had never enjoyed better flavors than that off The Royal Hatton Restaurant. Just be prepared to pay the establishment’s steep prices.

Silks is both a luxury “boutique” hotel and restaurant. Due to its location (immediately on the left as one turns off the main Marigot-Concord road towards Carib Territory and the fact that it usually is accommodating its own guests, the kitchen staff is able to prepare daily meal menus, each time also offering tempting specials. The cuisine at Silks is definitely international in scope, although touches of brightening Dominican flavor pop up regularly. Dining is around a floodlit pool, and the ambiance is enhanced by the gurgle of the nearby Crayfish River and a villa fountain.

You decide — the memories of a romantic dinner serenaded by peeping tree frogs (this one sang for us) might be well worth the price.
